Jumbo Raisin Cookies

Makes approximately 3 dozen cookies

 





Ingredients

  • 1 cup water
  • 2 cups raisins
  • 1/2 cup shortening, room temperature
  • 1/2 cup unsalted butter, room temperature
  • 2 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 4 cups flour
  • 1/4 teaspoon nutmeg
  • 1-1/2 teaspoons cinnamon
  • 1/4 teaspoon allspice
  • 1 teaspoon baking soda
  • 2 teaspoons salt
  • 1 teaspoon baking powder
  • 1 cup chopped nuts (optional)





Instructions

Step 1: Pre-heat oven to 375 degrees Fahrenheit.

Step 2: Cook raisins in 1 cup boiling water for five minutes.  Set aside and cool. Do not drain raisin mixture.

Step 3: Mix together flour, nutmeg, cinnamon, allspice, baking soda, baking powder, and salt in medium bowl; set aside.
 

Step 4: Cream shortening, butter, and sugar until light and fluffy. Add eggs one at a time and beat well. 

Step 5: Add vanilla and cooled raisin mixture. 


Step 6: Gradually add dry ingredients and blend well.  If you are using nuts, add them at this time and mix with wooden spoon. 



Step 7: Drop by teaspoon on greased cookie sheet. 

Step 8: Bake at 375 degrees until lightly brown 12 to 15 minutes.

In my aunt's recipe, she added the teaspoon of soda after the raisins and water had boiled and cooled. I love these cookies!

Brings back memories from my youth. My Mother made these all the time. Delicious!

Made these the way my grandma did, all by hand. That little 4'11" lady had some strength in her arms. They were delish.
